By the 19th century, there were no families with the surname Irsch in Irsch bei Saarburg. There is another village quite close to Trier called Irsch bei Trier. I don't have a church book with names for that village however. You might be interested to know that Ewald Meyer, who has written a history of Irsch, says that the village of Irsch first shows in records in abt. 960 as Eweson, 1038 as Ivasca, 1052 as Evesche and by 1360, after more similar changes was called Ische and from 1695 changed to Irsch and has not changed since. It would be possible that sometime after 1695, one of your ancestors left one of the Irsch villages and moved elsewhere. Thus he became known as "Irscher" or the one from Irsch. Eventually the "er" was discarded and the name became Irsch. Or there could be some other reason for the name. As you see, as the language changes with time, so do names of villages and people. There is a good deal of information about the "time of the trouble" as a younger resident of Zerf referred to the deportations and the destruction of Jewish property before and during WWII. In 1984, when I made my first trip to Zerf, there was a well-cared for Jewish cemetery in the village.
